Vegetarian High Protein Chipotle Cheddar Quesadilla
To quickly spice up your usual BBQ fare, grill up a cheesy, protein-rich vegetarian quesadilla! It's not necessary to eat no protein if you avoid meat!

- Grill the sliced pepper, onion, and mushroom in the grill pan until they are soft.
- Chipotle seasoning and cottage cheese should be combined.
- Lay the tortilla flat on the grill.
- Top with cheddar cheese after spreading half of it with cottage cheese and vegetables.
- For two minutes, cook with the grill cover open.

- Cook for a further 1 to 2 minutes, or until the cheese melts.
- Serve with salsa after slicing.
In comparison to a standard or P28 tortilla, a low-carb tortilla won't crisp and firm up as well.
