Try this incredibly moist, stunningly colourful red velvet protein cake prepared with roasted beets instead if you don't like artificial food colouring and copious amounts of sugar! The beet flavour, I swear, is hardly noticeable and really melds remarkably well with the cream cheese frosting. Therefore, if you're hesitant to use beets in a cake, simply use an equal amount of cooked sweet potatoes and add 1-2 tablespoons of red food colouring.

  1. 1.  Set the oven to 400 degrees.

    2. Wrap two medium beets in tin foil after cleaning and trimming them. When easily punctured with a fork, place in a baking dish and bake for 1-1/2 to 2 hours (the longer you bake, the more the natural sugars develop and the sweeter your beets will taste). This step can be completed up to a day beforehand.

    3. 350 degrees Fahrenheit should be used as the new oven temperature.
    Beets should have their outer peels removed before being put in a blender with yoghurt, egg whites, and other moist ingredients. Mix until emulsified.

    4. Mix the following dry ingredients in a medium mixing bowl: protein powder, sweetener, flour, starch, cocoa, baking soda, baking powder, and salt.

    5. Blenderized beet mixture should be added to the dry ingredients and thoroughly combined.

    6.Spray some cooking spray in two 6-inch ramekins, Pyrex bowls, or a 9-inch cake pan.

    7. Placed in the preheated oven, batter is poured into the prepared pots.

    8. 35–45 minutes of baking time, or until a toothpick or knife inserted comes out clean.

    9. Combine frosting ingredients while cakes are cooling, then chill for 15 to 20 minutes.
